For the crepes
- Mix the egg whites, sweetener, baking powder, cocoa, and flour in a deep bowl. Mix everything thoroughly, then pour in the milk and mix until smooth
- Cook in a dry frying pan, flipping occasionally, until fully cooked
For the cream
- In a thick-bottomed saucepan, mix the egg yolks, starch, and sweetener, then pour in the milk
- Mix everything until smooth and put on low heat. Cook the cream until thickened, stirring constantly
- Once the cream is ready, allow it to cool
- On a serving dish, stack the pancakes one by one, spreading cream between each layer, until the desired height of the cake is reached
- Finally, spread the top of the cake with cream and dust with cocoa powder. Place in the refrigerator for a few hours to allow the pancakes to soak and the flavors to meld. And you're done!
Notes
- You can use any flour for the pancakes.
- If you enjoy the flavor of vanilla, you can add a few drops of vanilla extract to the cream.
- Be sure to constantly stir the cream while cooking — this will help prevent lumps from forming and prevent it from burning.
