Easter Egg Leftovers Sandwich

- Peel the eggs. Mash them as finely as possible using a fork or a potato masher.
- Add mustard, sour cream or mayonnaise, salt/spices, and chopped herbs to the eggs — then mix until smooth and well combined.
- Spread butter on both sides of the bread slices and toast them in a pan until golden and crispy.
- On one of the bread slices, place some lettuce leaves, then add the egg filling, followed by another layer of lettuce, and top with the second slice of bread.
- Cut the sandwich in half and enjoy!
