Healthy Apple Pancakes
When apple season arrives, it’s a crime not to take advantage of it and make apple fritters at least once. They’re a fantastic idea for breakfast, dessert, or a snack. I’ve personally fallen in love with them so much that seasonality doesn’t matter anymore—I’m ready to make them every day!

- Grate the washed apple using a large grater in a bowl. After a few minutes, squeeze out all the juice and transfer the grated apple to the main bowl for the batter
- Quickly sprinkle the grated apple with lemon juice to prevent it from darkening
- Next, add the remaining ingredients: cinnamon, sweetener, egg, milk, and flour
- Mix everything thoroughly, and let it sit for a few minutes to allow all the ingredients to combine
- Fry over medium heat on both sides until golden brown
- Serve preferably hot, with your favorite toppings or accompaniments (such as berries, nuts, or chocolate)
Notes
The larger or smaller the apple, the more or less milk, flour, and eggs you will need to add. Use the consistency of the batter as your guide—it should be thick, but not dry or too runny.
You can peel the apple beforehand to make the pancakes even more tender.
You can make muffins and waffles from this batter—everything will taste great, especially with sour cream, yogurt, or your favorite toppings.
