Ingredients
For the wrap
- Green (raw) buckwheat 100 g
- Water 170 ml
- Roasted (boiled) beets 150 g
- Salt/Pepper to taste
- Powdered garlic ¼ tsp
For the filling:
- Salad mix 20-30 g
- Avocado 1 pc
- Grilled chicken fillet / Grilled Shrimps (if desire) 50-75 g
- Cherry Tomatoes / Cucumbers / Bell peppers optional
For the dressing:
- Greek yogurt 50 g
- Tomato paste / Ketchup 5-15 g
- Dijon mustard 5-10 g

Instructions
For the wrap
- Rinse the raw green buckwheat with water, cover it with clean water and leave it to soak for several hours
- Once the buckwheat has swollen, transfer it to a blender, add water, and blend until completely smooth. Pour the mixture into a deep container (for the main dough)
- blend the baked beets in the blender, then add them to the bowl with the buckwheat

- Now add salt, spices, and dried garlic to the vibrant mixture. Mix thoroughly, then pour everything onto a baking sheet lined with parchment paper or a silicone mat
- Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, or until the base is fully cooked. Let it cool slightly before you begin preparing the roll.
- While the base is baking, prepare the filling: wash the salad, chop the vegetables, and mince the meat
- Mix all the sauce ingredients in a small bowl using a whisk or fork
- Spread the filling evenly over the surface of the base, leaving a small border around the edges. Pour the sauce over everything, then roll it up. Cut it in half or into small pieces (if serving as an appetizer), and it’s ready to enjoy!
Notes
- It’s a good idea to prepare the main ingredients for the base in advance and at the same time—bake the beets while soaking the buckwheat in water.
- When ready, if you have a powerful blender, you can blend all the ingredients together in one bowl, which will be faster than doing everything separately, step by step.
- If you’re baking on a silicone mat or parchment paper in two layers, make sure the base holds together well and easily separates from the paper or mat (this may take a little extra time).
- For the filling and sauce, feel free to get creative and mix ingredients to match your taste preferences, or simply use whatever you have in the fridge.
- If your roll turns out too fragile, simply wrap it in parchment, cut it in half before serving, and it’s ready to enjoy!
