What is RAW desserts?

Raw desserts are desserts prepared without heat treatment (not baked, not fried) to preserve as many beneficial properties of the ingredients as possible. They are usually plant-based, often vegan, and contain little to no added sugar.

Main ingredients

  • Raw nuts and seeds — almonds, cashews, hazelnuts, sunflower seeds, flax, chia. Used as the base for crusts and creams.
  • Dried fruits — dates, dried apricots, figs, raisins.
  • Used as a sweetener and to give structure to the dessert.
  • Raw cacao beans or cocoa powder — for a chocolate flavor.
  • Fruits and berries — fresh or frozen, for creams, toppings, flavor, and color.
  • Coconut products — oil, flakes, milk, cream.
  • Raw sweeteners — maple syrup, agave syrup, honey (if not vegan).

Advantages

  • Vitamins and minerals are preserved — the absence of heat treatment retains nutrients.
  • Natural sweetness — sugar is often completely replaced with fruits and dried fruits.
  • Vegan and gluten-free — suitable for various diets.
  • Light yet nutritious — rich in fiber, healthy fats, and proteins.
  • Visually appealing and creative — easy to make bright layers, toppings, and decorations.

Who they are not suitable for

  • People with nut or seed allergies.
  • Those who do not control sugar/calorie intake — dried fruits are quite calorie-dense.
  • People with digestive issues, as raw nuts can sometimes be hard on the stomach.
  • Not always suitable for very young children due to the firm texture or high concentration of fruits.
