Ingredients
  • Broccoli 200-300 g
  • Parmesan Cheese 25-50 g
Broccoli dressing
  • Olive oil 50 ml
  • Smoked paprika 1.5 tsp
  • Dry Oregano 1 tsp
  • Dry or Fresh (minced) garlic ½ tsp
  • Salt / Pepper to taste
Broccoli Dipping
  • Canned/ boiled beans, chickpeas 1 can or 200 g
  • Lemon juice 15-20 ml
  • Dry oregano ¼ tsp
  • Salt / Pepper to taste
  • Green, nuts to serve

Instructions
  1. Transfer the washed and chopped broccoli to a ladle or pot, then fill it with boiling water. Simmer over low heat for about 10 minutes, or until the broccoli is tender
  2. In a small bowl, combine all the dressing ingredients: oil, paprika, oregano, garlic, salt, and pepper. Whisk until completely smooth
  3. Remove the cooked broccoli from the water and transfer it to paper towels to absorb any excess liquid. Next, place each piece on a baking sheet lined with parchment paper. Press down on the broccoli with a glass to flatten it slightly
  4. Using a silicone brush, coat each piece of broccoli with the dressing (oil and spices). Then, grate Parmesan cheese on top of each piece
  5. Bake in an oven preheated to 350°F (180°C) for 15-20 minutes, or until the broccoli is golden brown
  6. While the broccoli is baking, prepare the sauce by adding all the ingredients to a vitamix blender. Blend on high power until smooth
  7. Once the broccoli is ready, let it cool for a few minutes. Then, enjoy it by dipping it in the sauce. Bon appétit!
Notes
  • You can also make these chips using cauliflower.

  • For a richer flavor, try replacing the olive oil with melted butter and add extra spices to your liking.

  • It’s best to let the finished broccoli cool for a few minutes until the cheese hardens; otherwise, it may be too tender and not crispy right after baking.
