- Head of broccoli (~400 g) 1 pc
- Eggs 3-4 pcs
- Any flour 100-150 g
Psyllium husk 1 tbsp
- Salt 1 tsp
- Spices of choice (dried garlic, onion etc) to taste
- Baking powder (soda) ½-1 tsp
- Seeds (any nuts) 15-20 g
For breakfast preparation
- A slice of bread
- Cream cheese 10-20 g
- Lettuce/arugula/spinach leaves
- Lightly salted salmon 30-50 g
Instructions
- blend the broccoli florets in a blender until they turn into a fine, crumb-like texture.
- In a large mixing bowl, combine: blended broccoli, eggs, salt, spices, flour, psyllium, and baking soda. Mix everything thoroughly with a spatula until the batter is completely smooth and uniform.
- Transfer the mixture into a baking tin, sprinkle with seeds, and bake in a preheated oven at 180°C (350°F) for 35–40 minutes, until golden brown.
- Once baked, let the bread cool on a wire rack. Then slice it into portions and serve!
Notes
Key Tips for Preparation: Thoroughly clean fresh broccoli, removing leaves and tough stems. You can use any flour (I used green buckwheat flour). If you use regular flour, you don’t need to add psyllium; but if you use any other type, I recommend adding it. Psyllium contains essential fiber, making the bread healthier. To make it even tastier and richer, you can add 50–75 g of grated cheese. Nuts or seeds can be added directly into the dough — this will make the bread more filling and flavorful. If baking in a metal pan, it’s best to line it with parchment paper beforehand. This bread keeps well in the fridge, so it can be prepared in advance for a few days.
