- Whisk together the eggs, sugar, and seasoning
- Then add the oil, melted butter, and milk, and mix until combined
- Add the all-purpose flour, then pour in the hot water, and mix everything until smooth
- Finally, add the shredded cheese, and greens - stir everything together
- Using a ladle (large spoon), pour portions of the batter onto the heated pan and fry the crepes on both sides over medium heat until they are lightly browned and cooked
- When all the batter is used and the crepes are done, serve them with sour cream, Greek yogurt, or any of your favorite sauces
Notes
If you have time and want to make more complete, crack-free crepes, set your batter aside 5-10 minutes after preparing. This allows all the ingredients to combine fully, ensuring that your batter and crepes turn out perfect.
If you don't like greens, you can prepare these crepes without them, but adding chopped dill and parsley gives them a fresher taste.
