  • Croissant 1 pc
  • Blueberry (bilberry) 100 g
  • Cane sugar 15 g
  • Butter 15 g
  • Corn starch ½ tsp
  • + water 40 ml
  • Camembert Cheese / Brie 25-30 g
  • Powdered Sugar / Fresh berries / Mint leaves to serve

Instructions
  1. In a saucepan or a thick-bottomed skillet, combine all the ingredients for the berry filling: berries, sugar, and butter. Cook over low heat until the sugar dissolves, the butter melts, and the berries start to burst
  2. In a separate bowl, mix the water and starch until smooth. Pour it into the berry mixture as soon as it starts to boil, then turn off the heat. Stir again until fully combined and the filling thickens. Set aside to cool slightly
  3. Preheat the oven to 350-375°F (180-190°C). Slice the cheese into thin pieces and prepare the croissant for the filling by cutting it lengthwise without slicing through the bottom
  4. Spread the berry filling inside the croissant, place the cheese slices on top, and bake in the oven until the cheese melts (about 10 minutes)
  5. Transfer the baked croissant to a plate, add your favorite berries, dust with powdered sugar, and garnish with a few mint leaves. Done!
Notes
  • You can use any berries or a mix of berries for the filling, whether fresh or frozen filling.

  • To reduce the calorie content, you can use a sweetener and skip the butter in the filling, but trust me—this version tastes the best!

  • If you don’t have a croissant, you can make this as a sandwich using two slices of bread.

  • Of course, this dish is best enjoyed fresh, right after preparation, while the croissant is crispy and the cheese is perfectly melted. The ultimate combination!
