Ingredients
  • Rice paper 2 sheets
  • Eggs 1-2 pcs
  • Water ½ tsp
  • Cottage cheese 150 g
  • Mozzarella cheese (shredded) 40 g
  • Sun-dried tomatoes 10-20 g
  • Salt / Pepper to taste
  • Chopped greens / Sesame seeds to serve

Instructions
  1. In a small bowl, beat the egg with water, salt, and pepper until smooth
  2. Pour the egg mixture into a large, flat dish and place both sheets in it. Flatten them so that they become soaked in the mixture, ensuring they are completely wet, soft, and pliable
  3. Once the rice paper has softened (about 1-3 minutes), cover the tray with a silicone mat and place both sheets in the center
  4. Next, in the center of the sheets, layer the filling alternately: cottage cheese, chopped sun-dried tomatoes, salt and pepper, shredded cheese, and greens
  5. Carefully fold the sides of the rice paper, ideally shaping it like a boat (though a round shape, similar to puff pastry, is also an option). If desired, sprinkle the edges with sesame seeds and place them in the oven
  6. Bake in the oven at 360°F (185°C) for about 20-25 minutes, or until a crust forms and the cheese is completely melted
  7. Let it cool for a few minutes, then use a spatula to transfer the finished boat to a serving dish and enjoy!
Notes
  • These boats taste best when still warm and can be enjoyed as a breakfast or a side dish to soup or salad.

  • Rice paper can be soaked and softened with just warm water, but using an egg mixture makes the dish more nutritious and richer in flavor.

  • The filling can be adjusted to your taste preferences (swap grainy cheese for cottage cheese, sun-dried tomatoes for fresh, etc.).

  • If you're cooking for the whole family, adjust the quantities of ingredients accordingly.

  • Cooking on a silicone mat is recommended, as the bottom of the 'boat' may not always come off easily from parchment.

  • To make it easier to transfer the dish, allow it to cool down first.
