Healthy Flourless Buns
These buns are the perfect alternative to bread or other bakery products — healthier and lower in calories. Prepare the ingredients in advance, and in just 30 minutes, you’ll have fluffy, tasty, and guilt-free buns.

Ingredients
- Red lentils (dry) 200 g
- Psyllium 20 g
- Water 60 ml
- Olive oil 1.5 tbsp
- Baking soda ½ tsp
- Lemon juice / Apple vinegar ½ tbsp
- Salt ½ tsp
- Mix of raw seeds/nuts optional
Instructions
- Soak the pre-washed lentils in water for at least two hours, or preferably overnight
- Rinse the soaked lentils and transfer them to a vitamix blender or an immersion blender bowl. Add the remaining ingredients — psyllium, water, oil, baking soda, juice or vinegar, and salt—and blend until smooth
- Line a baking sheet with parchment paper. Grease your hands with oil, form round buns, and dip the tops into the seed mix. Place them directly onto the prepared baking sheet
- Bake the buns in a preheated oven at 350°F (180°C) for approximately 25 minutes. Let them cool for a few minutes, then serve immediately with your favorite toppings, whether sweet or savory

Please remember to soak the lentils for a few hours to make the cooking process much easier.

You can use an ice cream scoop to form buns of equal size.

Feel free to add seeds or nuts to the dough for extra flavor, though this will also increase the calorie content.

These buns taste amazing with butter or cheese and are equally delightful with honey or jam.

Even on the 2nd or 3rd day, they stay soft and delicious—though they’re so tasty, it’s unlikely they’ll last that long!
