  • Rice paper 6-8 pcs
  • Eggs 2 pcs
  • Sour cream 2 tbsp
  • Salt / Pepper to taste
  • Farm (cottage) cheese 180-200 g
  • Shredded cheese 100 g
  • Greens (parsley/dill) if desire
  • Sesame to serve

Instructions
  1. In a separate bowl, whisk together the eggs, sour cream, salt, and spices until smooth
  2. In another bowl, prepare the filling. Mix together the cottage cheese, finely grated cheese, and chopped greens until smooth
  3. Pour the egg mixture into a rice paper holder and dip each rice sheet one by one. Once it softens, transfer it onto a silicone mat, place 1 tbsp of filling near one of the edges, carefully fold the sides, and roll it into a neat mini roll
  4. Transfer the rice rolls directly onto parchment paper greased with oil. If desired, sprinkle them with sesame seeds and bake in a preheated oven at 200°C (400°F) for 15-20 minutes, or cook in an Air Fryer at 180°C (350°F) for 8-10 minutes
  5. Let the beautiful, golden-brown rolls cool slightly, transfer them to a serving dish, and enjoy them while they're still warm! (Though they taste great even when cold.)
Notes
  • To reduce the calorie content, you can soak the rice paper sheets in water instead of the egg mixture, but I’ve tried both methods and wouldn’t recommend this substitution—it affects the taste of the buns.
  • You can simply brush the rice paper with the egg mixture using a silicone brush—this way, no soaking containers are needed. The sheets should be brushed 2-3 times on each side until they soften.
  • It’s best to grease the parchment paper with oil or butter before baking so that the buns are easier to remove once they’re done.
  • Before serving, you can reheat them—they taste even better with melted cheese.
  • You can also experiment with the filling and add anything you like (or whatever you have in the fridge: sautéed vegetables, just grated cheese with herbs, mashed potatoes, baked meat with cheese, etc.).
