Instructions

For the baskets
- Place the oatmeal into the bowl of an immersion blender. Add the egg yolks, sweetener, baking powder, and Greek yogurt.
- blend everything with an immersion blender until smooth.
- Using a wet spoon or your hands, spoon the oatmeal mixture into the silicone cups, then spread it evenly over the bottom and sides
- Transfer the silicone molds onto a baking sheet and bake for 15-20 minutes in a preheated oven at 350°F (180°C)
For the cheese filling
- In a separate bowl, whisk together the cottage cheese, egg whites, vanilla extract, and sweetener until smooth
- Remove the baskets from the oven, fill them with the cheese filling, and arrange the berries on top
- Bake for an additional 25-30 minutes or until the cheese is set and a golden crust forms
- Allow the dessert to cool, remove the baskets from the molds and serve!
Notes
-
The mass for the baskets should be thick so that you can shape the bottom and sides of the baskets (adjust this with the amount of oatmeal).
-
Such baskets can also be made salty, just do not add sweeteners anywhere, replace them with salt accordingly + use a mix of sour milk cheese, hard cheese, and herbs for the filling, for example.
-
The baskets can be ideally suited as a breakfast, a snack, and a full-fledged dessert.
