Pumpkin fritters/ waffles
Fast and delicious breakfast in a season of pumpkin.

Ingredients
- pumpkin purée 150 g
- thick yogurt 100 g
- egg 1 pc
- sweetener to taste
- spices to taste (cinnamon, a little nutmeg)
- flour 70-100 g
- baking powder 1 tsp
- butter/any oil for frying
- jam/berries/sour cream/ honey or syrup for serving
Instructions
- Mix all ingredients until smooth
- Spread the frying pan or waffle maker with oil and cook fritter/waffles 2-4 min
- Serve with a berries/sugar powder/sour cream if desire
Notes
All ingredients should be a room temperature
I’ve used a rice flour and coconut yogurt
The dough should be like thick sour cream
