Ingredients
For the crepes:
  • Eggs (large) 3 pcs
  • Sugar 3 tbsp
  • Milk 500 ml
  • Oil 70 ml
  • All-purpose flour 240 g
  • Boiling water 150 ml
For the filling:
  • Cottage (farm) cheese 350 g
  • Сoconut flakes 50 g
  • Condensed milk 100-150 g
  • Condensed milk / Sour cream / Coconut flakes to serve

Instructions
For the crepes:
  1. In a large, deep bowl, beat the eggs, then add the sugar and continue beating until smooth
  2. Add some flour to the mixture and mix thoroughly with a whisk. Pour in some of the milk and mix again. Add the remaining flour and continue mixing until smooth. Then, add the rest of the milk and mix again until completely smooth, ensuring there are no lumps
  3. When the batter is completely homogeneous, pour in the oil and boiling water, then mix well. You can now begin frying the pancakes in a pancake pan. fry them over low heat on both sides until golden brown
For the filling:
  1. Mix the cheese, shavings, and condensed milk in a large bowl. Beat with an immersion blender until completely smooth
  1. Spread the filling onto the finished pancakes, leaving a small border around the edges. Roll them up and serve with your favorite toppings and side dishes.
Notes
  • Crepes are very easy and simple to make. Prepare all the ingredients in advance, and then it will only take a few minutes to cook them.
  • While cooking, stay near the pan and monitor the batter, as the crepes brown quickly. However, they are quite elastic and easy to flip, making them easy to work with.

  • These pancakes will taste great with any filling. The proportions and recipe for the batter recipe are definitely successful.

  • You can adjust the amount of condensed milk in the filling to suit your taste preferences.
  • If the finished, stuffed pancakes are fried in butter until they develop a crispy crust, they will be more calorie-dense, but even tastier and crunchier.
