Spinach waffles (pancakes) for breakfast

Ingredients
  • Oatmeal 50 g
  • Spinach 50 g
  • Eggs 2 pcs
  • Baking powder ½ tsp
  • Salt/ Pepper to taste
  • Shredded cheese 50 g
For the topping
  • Cream cheese (whipped as an option) 25-50 g
  • Grilled Shrimps / Lightly Salted Salmon 50-100 g
  • Green Salad / Arugula / Fresh Spinach 30-50 g
  • Avocado ½ pc
  • Nuts / Seeds / Balsamic glaze optional

Instructions
  1. Place the following ingredients into a mixer bowl: oatmeal, spinach, eggs, baking powder, salt, and pepper. blend until smooth
  2. Add the shredder cheese to the smooth spinach mixture and stir to combine
  3. pour the batter into the preheated waffle iron in portions and cook for 3-4 minutes, or until the waffles are golden and fully cooked (cooking time may vary depending on the device)
  4. Let the waffles cool slightly, then spread them with cream cheese. Top with lightly salted salmon or cooked shrimp, fresh herbs, avocado, and seeds. Drizzle with a delicious balsamic sauce, and your nutritious breakfast is ready to enjoy!
Notes
  • This batter also makes wonderful pancakes if you don’t have a waffle iron, this batter also makes wonderful pancakes. You can also bake buns in silicone or ceramic molds — either in the microwave (2-4 minutes at full power) or in the oven at 350°F (180°C) for 20-30 minutes, until fully cooked.

  • For an extra flavor, you can add diced ham or sausages to the batter.

  • The possibilities for fillings are endless—you can mix and match ingredients to your taste! However, it’s best to prepare everything in advance, as waffles cook quickly, making breakfast even faster.

  • For the best texture and flavor, these waffles should be made fresh right before serving—soft, warm, and delicious!
