Thanksgiving Salad
An easy and festive salad that makes any holiday meal special!

Ingredients
Salad ingredients
- Mixed spring greens 75-100 g
- Apples (sliced) 1-2 pcs
- Pomegranate (seeds) 1pc / 120 g
- Crumbled blue cheese (high quality) 120 g
- Candied Pecans (chopped) 120 g
For the dressing
- Olive oil 75 ml
- Honey 1 tbsp
- Apple cider vinegar 2 tbsp
- Dijon mustard (honey flavor) 2 tbsp
- Shallot (minced) 1/2 pc / 1 tbsp
- Salt / Pepper to taste
Instructions
- Slice the apples, remove the pomegranate seeds, and chop (or pre-caramelize) the nuts
- Mix all the sauce ingredients—oil, honey, apple cider vinegar, mustard, onion, and spices—until completely smooth
Layer the Salad Ingredients
- Place the lettuce leaves at the bottom
- Drizzle a few milliliters of dressing over the lettuce
- Add slices of apples, pomegranate seeds, or blue cheese (Gorgonzola) as desired
- Drizzle additional dressing in different areas of the vessel, next to each ingredient
- Add another layer of lettuce
- Finish with halved or finely chopped caramelized nuts on top
- Mix all the salad ingredients just before serving!
Notes
You can use pre-sliced apple slices or slice fresh apples yourself.
You can also swap some ingredients for your favorites:
• Pecans can be swapped for walnuts
• Honey can be replaced with maple syrup or any syrup
• Crumbled blue cheese can be substituted with crumbled feta, etc.
It will taste different, but it’s still a nutritious, delicious, and easy-to-make salad.
